$140Matt Browman of Artisan Wines has worked in fine wine and spirits for over 25 years. His career has spanned restaurant, retail, education, judging, writing and importing. He holds diplomas from the WSET, ISG, and has the advanced Sommelier designation from the Court of Master Sommeliers.
Matt has carefully curated the wines to highlight the riches of the Pacific Northwest.
The Pacific Northwest has a bounty of riches, from the amazing seafood to the richness of the coast. We will be exploring the bounty through a series of dishes with amazing wines to pair with them .

40°C cooked salmon with buttermilk cream, dill oil, roasted & pickled beets

Steamed halibut topped with house cured lardo, squash puree, miso brown butter sauce

Foraged mushrooms in creamy carnaroli rice topped with duck proscuitto

Red wine marinated tender beef cheeks with pomme puree, roasted carrots, braised & crispy leeks
