Puffed pasta with a warm tomato & roasted red pepper dip.

Raviolo
Hand-rolled egg pasta stuffed with ricotta, Parmigiano-Reggiano, fresh herbs & a whole egg yolk glazed with a red wine & butter reduction.

Prairie Carbonara
Semolina rigatoni tossed in Mans eggs, Grizzly gouda & crispy house-cured bacon.

Bolognese
Ground bison & sofritto, slow-cooked with white wine & broth tossed with hand-rolled fresh pappardelle.

Saccheti
Cacao egg pasta stuffed with a vanilla bean custard in a raspberry coulis & topped with crushed hazelnuts & chocolate curls.
