Hand-rolled egg pasta stuffed with ricotta, Parmigiano-Reggiano, fresh herbs & a whole egg yolk glazed with a red wine & butter reduction.

Semolina rigatoni tossed in Mans eggs, Grizzly gouda & crispy house-cured bacon.
Bolognese
Ground bison & sofritto, slow-cooked with white wine & broth tossed with hand-rolled fresh pappardelle.
